To accompany the batch of any type of Skewers and Flat Bread like Naans, Rotis or Parathas, following is this set of sauces that would go along with the main courses, flat-bread dippers, starters, as well as complement each other.
In this set there is a refreshing Mint & Cilantro sauce, a spicy Fusion Harissa sauce made with Pasand Red Chilli Sauce, a cooling Yogurt Lemon sauce and Pasand's Garlic Pickle.
This combination of sauces complemented the grilled food & flat bread and were perfectly balanced with each other. These different sauces allowed me to play “pakdam-pakdi with my palete” of sorts which made eating fun.
Not only did the types of food and sauces matter in the experience, but the order played a key role in it too (not exactly a new idea in the historical record of food but a fun thing to experience at home by accident).

Since each sauce was made with a different ideology and has a different “purpose” it stands to reason that each sauce affected the other ingredients differently as well. The easiest comparo would be dipping the grilled food in the yogurt sauce vs. the harissa sauce. The yogurt enhanced the lemony flavor of the grilled food and helped cool off its spiciness. The Harissa sauce is made of Pasand's fiery Spicy Sauce and instead invigorated the grilled food's spicy seasoning. And the Garlic Pickle invigorates absolute garlicky flavors on the palate. Its easy to talk about it now, but, really, I was taken aback with how different the “experiences” would be. I came to notice that I enjoyed pairing the grilled food more with the yogurt and mint sauces, and the flat bread with the fusion harissa sauce. Later I figure out that I probably did this to help balance things out a little bit in terms of spiciness. Although I also spooned generous portions of mint sauce and yogurt sauce on the bread as well so who knows really.
This was one of those meals that I had a lot of fun making and eating. I loved all four sauces & pickles and I still can’t decide on a favorite! You all can help me figure out the various patterns of the palete.

Fusion Harrissa Sauce
Harissa is a North African red chile paste or sauce made of a few simple ingredients including chiles, garlic, olive oil, citrus and a few warm spices. Since we are in India, we do not have access to the chillies used in the authentic Harrissa Sauce, so we have used
Pasand's Chillie Sauce.
