How to Prepare Aloo Matar-Gajar Ki Sabzi

  1. 1. Sauté the spices

    Heat the ghee or oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions and garlic and sauté until softened and golden brown.

  2. 2. Add the vegetables

    Stir in the turmeric, coriander, red chili powder, and garam masala. Cook for 30 seconds. Add the chopped carrots, potatoes, and frozen peas. Toss to coat with the spices.

  3. 3. Simmer

     Pour in the diced tomatoes and water. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
